Little Bites were my favorite childhood snack. I loved when my mom brought them home from the grocery store – they were the absolute best after-school eats 🙂 I had to create a gluten free Little Bites recipe so that I can continue to enjoy them after being diagnosed with celiac disease.

My recipe tastes just like the original Little Bites, minus the gluten, dairy, and soy. This is the perfect allergen-friendly treat. The recipe is extremely simple and only requires five ingredients . You’ll need an egg, almond flour, chocolate chips, dairy free milk, and coconut sugar. So easy!
The key to making these chocolate chip muffins taste EXACTLY like Little Bites is to leave them in an airtight container or bag as they cool. I tested this recipe several times and left them in the fridge in a glass container overnight. In the morning, they were extremely moist and had the perfect texture.
These gluten free Little Bites take about 16-17 minutes to cook in the oven if you are making regular-sized muffins. If you are making mini muffins, cook them for only 14-15 minutes. Either size works fine here.
Gluten Free Little Bites
Equipment
- Muffin tin
Ingredients
- 2 cups almond flour
- 1/2 cup dairy free milk
- 1/4 cup chocolate chips
- 4 tbsp coconut sugar
- 1 egg
- sea salt
Instructions
- Preheat oven to 350. Add the almond flour and coconut sugar to a bowl. Mix together and pour in 1/2 cup dairy free milk. Mix together again.
- Add in 1 egg and mix together. Once mixed together, add in chocolate chips.
- Spray a muffin tin with nonstick spray and add in the mixture. The number of muffins made will vary by what tin you use. You may not fill the entire muffin tin.
- Cook muffins for 15-16 minutes if they are regular-sized or 14 minutes if they are mini muffins.
- Once cooked, take muffins out of oven and sprinkle sea salt on top. Let cool for about 5 minutes.
- For the exact Little Bites taste, transfer the muffins to an airtight container and leave in the fridge overnight.
