I’ve been lucky to live my entire life in and outside of a city known for its amazing food. New York’s Italian food in particular is great – incredible pasta is everywhere! You don’t even have to go downtown to Little Italy to find it. Whether you’re craving gnocchi or lasagna, the NY restaurant scene has you covered. But what do you do when you have celiac disease? Entering…zoodles (zucchini noodles)!
I used to love pasta, but celiac disease and insulin resistance left me severely lacking in good options. With my dietary restrictions, I now have to pay more attention to safe ingredients as well as the amount of carbohydrates. Zoodles have really come in handy for me here!
Zucchini noodles are much lower in carbs than typical noodles and are naturally gluten free; after all, the one ingredient is zucchini. One thing to note is that zoodles are quite low in calories. They are not the most filling on their own.
When paired with protein and fat, however, zoodles make for an awesome dish that tastes indulgent. Another “hack” is to mix in some GF pasta to make the dish more filling/get in some carbs.
This particular zoodle recipe takes only five minutes (!!!) and is so yummy! I absolutely love it and hope you enjoy it as much as I do.
The extremely short time it takes to make this meal is due to the texture of the zoodles. If you cook them for too long, the zoodles will likely become soggy. Trust me, soggy zoodles are not good. Cook them the right way instead and they will taste delicious!
I really like the combination of fresh zucchini noodles, creamy goat cheese, savory sausage, and nutty tahini dressing. This meal is really flavorful! Hope you enjoy the recipe – if you make it, let me know what you think 🙂
Five Minute Zoodles with Sausage and Tahini Dressing
Ingredients
- 1 package zucchini noodles
- 3 links Applegate chicken and sage sausage (any precooked sausage will work)
- 1 tbsp fresh goat cheese
- 1/2 cup tahini
- 1 cup coconut milk
- 2 tbsp nutritional yeast
- 1 tbsp olive oil
- spices to taste
Instructions
- Place zoodles on a pan on medium heat. Add 1 tbsp olive oil, red pepper flakes, salt, and pepper. Watch zoodles carefully to ensure they do not overcook.
- Simultaneously, wrap three links chicken and sage sauces in a damp paper towel. Microwave for one minute. When finished, cut links into smaller pieces. Set aside.
- Add tahini, coconut milk, nutritional yeast, and spices (salt, pepper, basil) to a blender. If mixture is too thick, add more coconut milk. You want this to have the consistency of a dressing!
- When zoodles are done cooking, add to a plate and top the zoodles with sausage pieces. Additionally, cut 1 tbsp goat cheese into smaller pieces and add to the top of the plate.
- Drizzle tahini dressing over plate and enjoy! Top with salt, pepper, red pepper flakes, fresh dill, and lemon juice.
