This cauliflower gnocchi with pesto recipe is so good! It’s incredibly easy to make and only requires two ingredients (plus olive oil and spices). I like to use my air fryer when cooking cauliflower gnocchi. The air fryer gives the gnocchi the most delicious texture – browned and crispy on the outside but chewy on the inside. Yum!
The air fryer has been such a game changer for me and I use it daily. Air fryers are evidently amazing at creating healthier “fried” foods, but I also love to use them in many other ways. I love to air fry frozen veggie burgers to heat them up and cook them. I also love throwing veggies in the air fryer. Japanese sweet potatoes, broccoli, zucchini, and more are so good when cooked this way!
If you don’t have an air fryer, you can also cook the cauliflower gnocchi on a pan on medium heat. To make the gnocchi in a pan, microwave it from frozen for a few minutes. Spray a nonstick pan with olive oil and put on medium heat. Add the gnocchi and cook until slightly browned. P.S. you absolutely need a nonstick pan if you are cooking it this way. Without a nonstick pan, the gnocchi will become gummy and stick to the pan, rendering it inedible.
I really like Trader Joe’s kale cashew basil pesto. It is gluten free, dairy free, and vegan. For my dairy free friends, this is the pesto for you! There’s no parmesan or other cheese in it.
The pesto is delicious in so many recipes. I love using it on gluten free sandwiches, toasts, and pasta. It’s also yummy on top of seafood! This cauliflower gnocchi with pesto recipe is a particularly great combo that I eat regularly.
Cauliflower Gnocchi with Pesto
Equipment
- Air fryer
Ingredients
- 1 bag Trader Joe's cauliflower gnocchi
- 2 tbsps pesto I used Trader Joe's kale cashew pesto here, but you can use whatever you have on hand
- olive oil spray
- garlic powder
- black pepper
Instructions
- Add cauliflower gnocchi to air fryer (from frozen) and spray olive oil on top.
- Add generous amount of garlic powder and black pepper on top of the gnocchi. Shake around in the air fryer and cook on 390 for 10 minutes.
- Pause the air fryer around 9 minutes to check on the gnocchi. You want it to be browned on the outside. Depending on your air fryer's settings, you can give it another minute or more than that.
- When finished, add gnocchi to a bowl. Take 2 tbsp pesto and add to pasta. Mix it around in the bowl to ensure that all gnocchi is covered. Enjoy!
