Today I made a healthy, easy mahi-mahi salad for lunch and swapped my usual grilled chicken or tofu for sautéed fish. I am so glad that I made the switch today and I am definitely going to be eating this more often. The mahi-mahi provides such a refreshing and summery touch! I loved eating it with lots of fresh vegetables and salsa.
If you haven’t tried it before, mahi-mahi is a white fish that is delicious and full of protein. Some refer to mahi-mahi as “dolphinfish”. Atlantic mahi-mahi is sustainably managed and responsibly harvested, according to the National Oceanic and Atmospheric Administration.
Wild-caught + responsible fishing + easy to cook is a great seafood option in my book.
I commonly see salmon in salads, but I encourage you to try adding mahi-mahi as well/instead! Trader Joe’s makes amazing mahi-mahi burgers that cook quickly and taste great. They are stored in the freezer, but can be cooked from frozen or thawed relatively quickly.
The burgers taste like juicy white sautéed fish. They do not have a strong “fishy” taste whatsoever. The burgers just taste savory and delicious. Even picky eaters will love them.
This salad is extremely easy to make and requires very minimal effort, but it’s filling and tasty. The recipe tastes like something you would order out at a restaurant and it’s a fun way to mix up your typical salad. The recipe is below – I hope you enjoy it.
If you don’t have a Trader Joe’s near you, you can absolutely use a mahi-mahi filet in place of the burger. Just season it with black pepper, sea salt, and lemon juice. Keep it relatively plain so that the natural flavor of the fish comes through.
Healthy Mahi-Mahi Salad
Ingredients
- 1 Trader Joe’s mahi-mahi burger
- 1 handful cherry tomatoes
- 2 cups arugula
- 1/2 avocado
- 1 scoop pico de gallo
- 1 scoop salsa of choice
- 1 scoop tomatillo salsa
- 1 lime (optional)
Instructions
- Put a nonstick pan on medium heat and add frozen mahi-mahi burger.
- Cover pan for a minute or so until you hear sizzling. Flip burger occasionally.
- The burger will be done cooking once it has lightly browned. At this point, add handful of cherry tomatoes and sauté for a minute or so until wrinkly.
- Remove sautéed tomatoes and cooked mahi-mahi burger. Cut burger into thin strips.
- Add fish strips and tomatoes to a bed of arugula. Then, add your salsas and pico de gallo.
- All done! Optional: dress salad with juice of 1 lime.
