This Mediterranean kale salad is so easy to make and is full of amazing flavor and nutrients. For my vegan friends, this recipe is perfect for you – there’s no meat, dairy, or eggs here. To make this salad, all you have to do is sauté some kale and tofu. What an easy and quick way to get in a healthy meal 🙂
For the protein in this salad, I decided to use some tofu. I cooked about half a block of firm tofu to add in here. I really love how tofu absorbs the flavor of the dish it is in; it takes on the flavor of coconut aminos and nutritional yeast here nicely.
The greens are only seasoned with nutritional yeast and garlic powder because the rest of the Mediterranean kale salad is really flavorful. For toppings, I used Bitchin’ Sauce and Trader Joe’s organic hummus as well as some savory crispy roasted chickpeas. Roasted chickpeas are my favorite!
Adding hummus to a salad is a great hack. I always do so in order to add some extra flavor without having to blend a new dressing together. I also drizzled some tahini on top.

Mediterranean Kale Salad
Ingredients
- 2 cups kale
- 1/2 block firm tofu
- 1 tbsp roasted chile and pepita Bitchin' Sauce
- 2 tbsp hummus of choice
- 1 tbsp tahini
- 1 tbsp coconut aminos
- 3 tbsp nutritional yeast
- garlic powder
Instructions
- Add kale to a pan on medium heat for 5-7 minutes. Top with nutritional yeast and garlic powder. Spray with coconut oil (optional).
- As the kale begins to wilt, mix around in pan with garlic and nutritional yeast. Add to a plate, and add 1/2 block of tofu to the pan.
- Coat the tofu in 1 tbsp coconut aminos and more nutritional yeast and garlic. Saute until browned.
- Add the tofu, hummus, and sauce to the bed of kale. Drizzle tahini on top for a dressing and add any desired spices!
